Coco's Frittata

Breakfast Frittata
One day not to long ago my Mother wanted a breakfast frittata. So what is a  a Frittata anyway? It is somewhat like and omelet, but more like a quiche that does not have a crust. My Dad makes and follows recipes. My Mom and I don't. You can add almost anything in a Frittata and it will work. Fear is not an option. Julia Child said it best, "The only real stumbling block is fear of failure. In cooking you've got to have a what-the-hell attitude."
If its got Cheddar cheese how can it fail?
I had made a Frittata in culinary school, which now seems like a very long time ago. You're going to need a 12" skillet for the top of the stove that also can be placed into a 325°F oven as well. A well seasoned cast iron skillet works well for this purpose. So put on your apron and let's get cookin.  
Farm fresh eggs
INGREDIENTS
10   whole     Eggs (large, beaten)
6     oz.          Breakfast sausage links, casings removed
1/2  lb.          Bacon, cooked, cut into pieces
4     oz.         Mushrooms, sliced, sauteed
1/4  lb.          Cheddar cheese, shredded 
1/4  lb.          Swiss cheese, shredded 
1/4  tsp.        Black pepper, coarse ground
    to taste     Basil, Oregano, Chives, minced

DIRECTIONS
Preheat oven to 350 degrees F. Heat nonstick 10-inch skillet with oven-safe handle (or cover handle with heavy-duty foil for baking in oven later) over medium heat. Add sausage and cook until browned, about 5 minutes, stirring frequently to break up sausage. With a slotted spoon, transfer sausage to paper towels to drain.

Discard all but 1 tablespoon of drippings from skillet. To skillet, add peppers, onion, and 1/2 cup water, and cook, stirring occasionally, until vegetables are tender, about 12 minutes.
Meanwhile, in large bowl, with wire whisk or fork, beat eggs with parsley, salt, and pepper until blended; stir in mozzarella.
Pour egg mixture over vegetables in skillet; stir in sausage. Cook 3 minutes, without stirring, or until egg mixture begins to set around edge. Place skillet in oven; bake 12 minutes or until frittata is set.

To serve, place a cutting board or platter over top of skillet; invert. Remove skillet and cut frittata into wedges and serve.
